KOLBASE POTATO SALAD
1 Kolbase ring
2 lbs. cooking potatoes
1/2 cup vegetable oil
4 Tbsp. cider vinegar
1 Tbsp. sugar
3 Tbsp. mustard
1/2 bermuda onion, coarsely chopped
1 cucumber, peeled and thinly sliced
3 Tbsp. chopped chives or dill
DIRECTIONS: Put kolbase in pan of cold water, bring to boil, simmer on low
heat for 10 minutes. Steam the potatoes in their skins until tender, then peel
and slice thinly. Put the oil, vinegar, sugar, mustard and onion in a blender
and blend one minute. Pour this dressing over the sliced warm potatoes, mix
well then add the cucumbers and chives or dill and mix again. Add salt and pepper
to taste. Serve at room temperature with kolbase.
